WHOLE (butchered, cryovacced) – open sourced (wild shot) venison.

Venison has a wonderful woody, almost fruity flavor and has a texture similar to beef. Ideal for grilling and barbecuing, venison should be cooked at a high temperature similar to steak.   Allow 7-21 days to process your order. This product is sold by final weight and is shot and broken down to order.  Weight (approx.): 14 – 24 kg.  Please refer to the tab on this page, below, as a guide to what’s in the box. Deer can be very small OR very large, so let us know your preferences. 

HOW TO ORDER:

Product Details

Our Australian wild Fallow and Chital deer, harvested from the Ballandean area on several different properties where the animals are running free range, is shot at night while deer are resting, meaning no stress or anxiety on the herd or the animal.  Each cull is carried out by qualified hunters as part of a chemical free, sustainable culling program. Only the highest quality juveniles are set-aside for Hand Sourced.  Our venison is shot to order, please allow a 2-week window for first delivery. Our shooters do not shoot during breeding season.  (Early winter).

Carissa and Allan began their business with the hope to cull the numbers by a controlled harvest, and to be able to process and sell the meat to the public. This is healthier, and more sustainable than the government culls where the carcass is left to rot and waste. 

Deer are harvested and skinned on a Tuesday night, then aged in cool room conditions for 4-7 days before being sent to Hand Sourced. Delivery into Brisbane is on a Friday, meaning a Monday delivery for Food service.

What do I get?

The carcass dressed hot weight for human consumption is anywhere from 8 – 70 kg. After butchering, depending on the cuts, remains 8-28kgs of meat.

A standard butchered carcass consists of the following:

2 Legs: bone in OR bone out (rolled) OR one leg diced OR both legs diced
2 Shoulders: bone out, rolled OR bone in (eliminate Y bone)
Y-Bone chops (only with rolled shoulder)
T-Bone chops (OR) Backstrap and tenderloin (eliminate loin chops)
Loin Chops
2 spare ribs
Osso Bucco
2 Shanks (OR) 4 Osso Bucco (eliminate 2 shanks)
Neck chops (a neck weighs about 200-500g)
You can receive all bones

Heart, Liver, Lungs, Kidneys are $8.50 per kg.

Your deer can be as small as 7-9kg in total, OR as large as 15kg – please let us know your preference and we will have your order matched.

Collection and Delivery

Please place your order and choose collection or delivery.

Where a deposit is required, the balance of your account is subject to final weight. This is to avoid you underpaying should your order come in more of less than the farmer’s estimation.  Payment of your balance must be made prior to collection /delivery, and can be made via cash, eft, or credit card (a 2.5% surcharge applies) and will be issued via invoice. Invoices are issued to food service clientele on wholesale pricing. Please let us know if you require a credit application.

This product will be available to collect from Clayfield, Brisbane.

Opening Hours are Thursday-Friday: 9.00 am - 4.00 pm for casual walk ins, and Mon-Weds 9.00 am - 4.00 pm by prior arrangement. We are often on farm property or with food service clients, so a quick call or text to arrange will ensure you are not kept waiting.

Delivery orders must be over $80.00 in value.

PICK UP FAQ

1. Where can I pick up my order? You can pick up from us at Clayfield Thursday and Fridays, 9.00 am - 4.00 pm, or by making an appointment. We are a small business, and our time is divided between farms, food service outlets and serving you, so please be patient and we'll be flexible.

2. Is there a minimum amount for pick up orders? Picking up from us: No limit - buy as much or as little as you wish.

3. Do I need to bring my own esky to pick up my order? Yes! We love it when you bring your own esky, styrofoam box, or cooler bag. During the week, our fridge is well-stocked with all sorts of products including some things you won’t find in the online shop. If you don’t see what you want, we can usually find it for you. Alternatively, you can place an order online and come and pick it up.

 

DELIVERY FAQ
Please note: we require a minimum delivery order value of $80.00.

1. Where do you deliver? We deliver all over Brisbane, Gold and Sunshine Coast, and Toowoomba regions by a sub-contracted refrigerated courier service. Please get in touch if you need delivery outside these areas.

2. How much does delivery cost? Depends on where you are. Delivery is set by the refrigerated courier and ranges from $35.00- $55.00.

3. How will my order be packed? All orders are packed in a sealed box. Your produce will remain fresh and cold inside the courier service vehicle. Couriers can not leave fresh or frozen meat unattended, so please ensure someone will be available to receive. We mostly use recycled boxes .
