WHOLE (butchered, cryovacced) – open sourced (wild shot) venison.

Venison has a wonderful woody, almost fruity flavor and has a texture similar to beef. Ideal for grilling and barbecuing, venison should be cooked at a high temperature similar to steak.   Allow 7-21 days to process your order. This product is sold by final weight and is shot and broken down to order.  Weight (approx.): 14 – 24 kg.  Deer can be very small OR very large, so let us know your preferences. 

HOW TO ORDER:

Product Details

Our Australian wild Fallow and Chital deer, harvested from the Ballandean area on several different properties where the animals are running free range, is shot at night while deer are resting, meaning no stress or anxiety on the herd or the animal.  Each cull is carried out by qualified hunters as part of a chemical free, sustainable culling program. Only the highest quality juveniles are set-aside for Hand Sourced.  Our venison is shot to order, please allow a 2-week window for first delivery. Our shooters do not shoot during breeding season.  (Early winter).

Carissa and Allan began their business with the hope to cull the numbers by a controlled harvest, and to be able to process and sell the meat to the public. This is healthier, and more sustainable than the government culls where the carcass is left to rot and waste. 

Deer are harvested and skinned on a Tuesday night, then aged in cool room conditions for 4-7 days before being sent to Hand Sourced. Delivery into Brisbane is on a Friday, meaning a Monday delivery for Food service.

Collection and Delivery

Where a deposit is required, the balance of your account is subject to final weight. This is to avoid you underpaying should your order come in more or less than the farmer’s estimation.  Payment of your balance must be made prior to delivery, and can be made via eft or credit card (a 2.5% surcharge applies) and will be issued via invoice. Please check our shipping and delivery page for all rates and information. 


LOCAL DELIVERY We deliver throughout Brisbane, Gold and Sunshine Coasts, and the Toowoomba regions by sub-contracted refrigerated courier services. Please get in touch if you need delivery outside these areas. Delivery fee is set by the refrigerated courier and ranges from $35.00 (Brisbane and suburban)- $55.00 (Coastal and Ranges). All orders are packed in sealed boxes. Your produce will remain fresh/frozen inside the courier service vehicle. Couriers can not leave fresh or frozen meat unattended, so please ensure someone will be available to receive. Please visit our shipping and delivery page for rates. Air freight may apply to regional areas.

REGIONAL DELIVERY Delivery is available to most locations throughout South East Queensland and Northern New South Wales. Please visit our shipping and delivery page for costings. Air freight may apply depending on your location. All orders are packed in sealed boxes. Your produce will remain fresh/frozen inside the courier service vehicle. Couriers can not leave fresh or frozen meat unattended, so please ensure someone will be available to receive.

INTERSTATE DELIVERY All interstate freight can be sent via Toll Road to your home address (slower); or by Virgin/Qantas Freight (faster) to your closest major airport listed here on an 'airport to airport' basis. 

  • Refrigerated Road: Please request a weight guide from us. You can then organise TOLL/refrigerated road collection and delivery to suit your details. Let us know when you are ready to go and we'll have your order waiting for the courier. The address for courier pick up is Canberra Road, Hemmant, open 4am-3pm Mon-Thurs, 4am-1pm Fri.
  • Virgin Freight: Flights to major airports listed here on an 'airport to airport' basis. Fees will also apply for delivery to the Brisbane airport at a rate of $35.00 per drop.  Air freight delivery fees are set by the airline. 

Your produce will be packed in sealed boxes and will remain fresh/frozen inside the aircraft and courier service vehicles, and if using VIRGIN freight, you will need to arrange to collect your item from the designated airport inside the detailed opening hours as terminal freezing is not available. Fees will also apply for delivery to the Brisbane airport at a rate of $35.00 per drop. Air freight delivery fees are set by the airline.
