Delicate, rich, and deeply nourishing, these livers are harvested by hand on each processing day, immediately vacuum sealed, and never bleached or chemically treated. Their freshness and purity make them ideal for pâté, terrine, pan-frying, or enriching stocks, with texture and depth that only comes from naturally raised birds.

A true heritage breed, Sommerlad chickens are slow-grown over 12–14 weeks in open grassy woodlands, where they forage naturally and mature at their own pace. Raised with care by the Kiss family at Meramie Farm in Wellington, NSW, each bird reflects ethical handling and exceptional eating quality.

Sale reason: These livers were snap frozen prior to sale. The bags are irregularly shaped because they were frozen upright rather than flat. Each bag contains approximately 1kg, with a best-before date of July 2026. Quality is unaffected—this is purely a packaging shape issue.

ORIGIN STORY

Our Heritage chickens are single origin, which means they all come from the same farm.

These chickens are small-batch, ethically raised, and enjoy longer, free-ranging lives in the woodlands of the Kiss family farm, ‘Meramie’, Wellington, New South Wales. They grow naturally at a slower pace, allowing for harmonious organ, muscle, and bone development over 14-18 weeks. The entire process, from start to finish, takes place in the family-owned farm abattoir, ensuring a chemical-free production. Kim and Bryan breed, grow, and process the only remaining original Sommerlad genetics all on farm.

Outdoor reared, happy, healthy natural chooks, free to roam whenever they like. These meat chickens are an excellent choice if you want a truly natural, slow-grown chicken that is full of flavour and reminiscent of the chickens of yesteryear.

Delivery details

Each carton is dispatched from our Sydney warehouse to the address supplied with your order. Carton weights listed are indicative; your invoice will reflect the true weight of the carton.

Product is kept in a frozen chain from our depot to your nearest cold store. However, the courier who delivers your cartons may use a refrigerated vehicle transported at 0–1°C, which means you might (occasionally) notice some softening around the edges.
