Each order is for one carton of mixed offal (approx. ⅓ each of hearts, livers, and giblets), packed in vacuum-sealed 500g/1kg bags. Two carton sizes are available: 7 -8kg appx, or 12–14 kg.
Deeply nutritious and full of flavour, this offal mix is perfect for pâtés, broths, terrines, pet food, or adding richness to traditional dishes. With firm texture, clean flavour, and no synthetic additives, these organs are as honest as the birds they come from.
A bird of true distinction, the Sommerlad heritage chicken is slow-grown for 12–14 weeks in open grassy woodlands, where it forages naturally and develops real flavour. Raised with care by the Kiss family at Meramie Farm in Wellington, NSW, these birds yield offal of rare quality — dense with nutrients and prized by chefs.

ORIGIN STORY
Our Heritage chickens are single origin, which means they all come from the same farm.
These chickens are small-batch, ethically raised, and enjoy longer, free-ranging lives in the woodlands of the Kiss family farm, ‘Meramie’, Wellington, New South Wales. They grow naturally at a slower pace, allowing for harmonious organ, muscle, and bone development over 14-18 weeks. The entire process, from start to finish, takes place in the family-owned farm abattoir, ensuring a chemical-free production. Kim and Bryan breed, grow, and process the only remaining original Sommerlad genetics all on farm.
Outdoor reared, happy, healthy natural chooks, free to roam whenever they like. These meat chickens are an excellent choice if you want a truly natural, slow-grown chicken that is full of flavour and reminiscent of the chickens of yesteryear.

Grassland’s Sommerlad Heritage Chicken offal portions are hand-harvested each processing day, and immediately vacuum packed for optimum freshness, never bleached or chemically treated, (read more about that here) meaning resulting dishes are completely chemical free. Each carton holds approx 7-8kg or 13-15kg offal in 500g bags.

Each carton is dispatched from our Sydney warehouse to the address supplied with your order. Carton weights listed are indicative; your invoice will reflect the true weight of the carton.
Product is kept in a frozen chain from our depot to your nearest cold store. However, the courier who delivers your cartons may use a refrigerated vehicle transported at 0–1°C, which means you might (occasionally) notice some softening around the edges. This is normal and part of the Australian logistics network. You can read more about that here.
