Each order is for 1 x carton containing 4 geese, each weighing 3.5-4.5kg per bird approx. Geese have head and feet intact and include offal bagged separately.
Heritage geese are raised slowly and allowed to roam on pasture. At Broody Goose Farm, our birds spend summer growing in ideal conditions, and once they reach perfect condition in late autumn, they’re harvested and snap frozen — ready for festive tables later in the year.

Quite simply, they offer a better eating experience — and they enjoy a far more natural life. Commercial breeds are designed to grow rapidly and are often raised indoors or in confined outdoor areas. Heritage birds, in contrast, take their time. They live outdoors, forage widely, and enjoy fresh pasture.
This slower, more active upbringing — with access to grasses, seeds and insects — produces a beautifully balanced bird with richer flavour, finer texture, and a natural layer of fat that keeps the meat tender and succulent. Rich, fatty and full of flavour, goose is ideal for slow roasting, with beautifully crisp skin and luscious fat perfect for rendering. Save the fat for roasting vegetables — it’s liquid gold.

ORIGIN STORY
Incubated and grown on farm, these birds spend their days in large penned off bush areas where they roam free from predators. Chemical and hormone free, and packed by hand by Lucy Kruger, goose farmer and grower, after processing. Birds are supplied frozen. Typical weight 3.5-4.5kg per bird.

Each carton is dispatched from our Sydney warehouse to the address supplied on your order. Carton weights listed are indicative, your invoice will reflect the true weight of the carton.
Product is kept in a frozen chain from our depot through to your nearest cold store, however the courier who delivers your cartons may use a refrigerated vehicle, transported at 0c-1c – which mean you might (not always) see some softening of the product around the edges. This is not a problem – it is part of the Australian logistics networks. You can read more about that here.
