Marylands are deeply flavourful, and ideal for roasting, slow braising, or grilling. Substantial enough that one per person is more than enough for a satisfying meal. For extra succulence, bring to room temperature before cooking and finish with a short rest.
A bird of true distinction, Sommerlad chickens are slow-grown for 12 to 16 weeks in open grassy woodlands, free to roam and forage, developing rich, dark meat, golden skin, and deeply flavoured bones — the hallmarks of real chicken. Raised from breeding to harvest in a closed-loop farm system, this rare heritage line offers a depth of flavour that rivals the famed French Bresse, yet remains uniquely our own. From the Kiss family’s Meramie Farm in Wellington, New South Wales, these birds embody dedication to quality and flavour.

Our Grassland Sommerlad Heritage chickens are the original Australian heritage chicken genetics — bred, raised, and processed entirely on the Kiss family’s farm, Meramie, in Wellington, NSW. Slow-grown in open grassy woodlands, they enjoy a natural 14–16 week life cycle that develops strong bone, muscle, and flavour. Outdoor-reared and chemical-free, they offer the rich taste and character of chicken as it once was.

Each carton holds 12-14kg Marylands packed in pairs. Marylands are large, and 1 per serving is more than generous.
One of the most noticeable differences between Sommerlad Heritage chickens and traditional Cobb/Ross chickens is that the legs are much longer and more powerful, and so much more flavourful with real ‘dark meat’. If you like Marylands, you’ll love these. Save the bones in your freezer until you have enough to make a pot of thick, rich, stock.

Each carton is dispatched from our Sydney warehouse to the address supplied with your order. Carton weights listed are indicative; your invoice will reflect the true weight of the carton.
Product is kept in a frozen chain from our depot to your nearest cold store. However, the courier who delivers your cartons may use a refrigerated vehicle transported at 0–1°C, which means you might (occasionally) notice some softening around the edges. This is normal and part of the Australian logistics network. You can read more about that here.
