Moorlands Lamb has been officially recognised as the finest lamb produced in Australia. Hogget is slightly older than lamb, having developed their first two teeth. This is young hogget (or ‘two tooth). All Moorlands Hogget is Trade Weight weighing in at 18-22kg whole, hanging (dead weight). Once you factor in all the trimming and bone-in cuts, you can expect anywhere between 11-18kg of meat to stock your fridge or freezer from a 22kg two tooth sheep. If you’re going for just a side, cut that amount in half.  Weights are variable, depending on if you choose bone in (or out) cuts, if you choose extra bones or offal, however, the price of each side remains constant at $240.00 per side regardless of your choices. ORIGIN STORY

Moorlands Bio-Dynamic Lamb is owned and managed by Vincent (Vince) Heffernan who is not only a 6th generation sheep grazier but also a noted expert on new forms of regenerative land management. The farm, Moorlands, has been in the family for over 180 years. Moorlands is a 3,000 acre property in the southern tablelands fronting the Lachlan River. Its contrasting terrain includes lush green pastures, rolling hills and rocky hills where the only access is on foot.

All sheep are born and spend their entire lives on Moorlands, a fully Demeter certified farm. None of the lambs are fed hay or any grain made from GM Canola, or exposed to fungicides [sadly used widely on many wheat crops]. No insecticide, artificial fertiliser [fabricated salts], weedicide, chemical drench, chemical dips or pesticides are applied to the soil, plants or animals on Moorlands. The lambs have a smorgasbord of grass varieties on which to graze – pasture fed – nothing artificial or forced.

The genetic base is centred around one principal breed – the fabulous Texels. A breed originating in the Netherlands producing flavorsome meat, with sweet, ‘nutty’ fat (but not too much!) and affording wonderful silky texture. In addition to grazing grass, lambs on Moorlands have access to over 40,000 native shrubs – mainly wattle. They love to browse the leaves on these as well as eat the seeds. The seeds are very high in protein. The leaves have been shown to be beneficial to their health. Many top chefs think this unique diet is part of the reason that Moorlands Texel sheep meat is so special.

Each carton is dispatched from our Sydney warehouse to the address supplied on your order.  Carton weights listed are indicative, your invoice will reflect the true weight of the carton.

Product is kept in a frozen chain from our depot through to your nearest cold store, however the courier who delivers your cartons may use a refrigerated vehicle, transported at 0c-1c – which mean you might (not always) see some softening of the product around the edges. This is not a problem – it is part of the Australian logistics networks. You can read more about that here.
