Each order is for one carton of whole pheasant, containing 3 birds (average 0.7–1.0kg each) per carton, supplied frozen. ‘1’ = 1 x carton of 3 birds.
Ideal for slow roasting or breaking down for braises, pheasant has a gently gamey, sweet flavour that suits both classic and modern preparations. Try roasting with thyme and pancetta, or poaching in broth for deeply flavoured soups. Wild Pheasant are very hard to find, and only available from Kangaroo Island in small amounts.

ORIGIN STORY
On Kangaroo Island, South Australia, these pheasants live as wild, thriving under netted bushland on coastal bush blocks. Never caged or restrained, partridges and are incubated, reared, and raised on the island before being chemical-free processed on the mainland.
These one-of-a-kind free-range birds have every taste of the wild – a good climate, fresh bugs and insects, a wide variety of native grasses, seeds, and rainwater – and it shows in their exceptional eating quality. These birds are the best of the best and can only be found at Hand Sourced as grown by John and Christine Kersley.
Description
A seasonal product, quantities are available from May through August, then frozen stock is available until sold out. Pheasants have a rich, sweet flavour with slight game overtones. Available in cartons of 8-9, supplied frozen.

Each carton is dispatched from our Sydney warehouse to the address supplied on your order. Carton weights listed are indicative, your invoice will reflect the true weight of the carton.
Product is kept in a frozen chain from our depot through to your nearest cold store, however the courier who delivers your cartons may use a refrigerated vehicle, transported at 0c-1c – which mean you might (not always) see some softening of the product around the edges. This is not a problem – it is part of the Australian logistics networks. You can read more about that here.
