Moorlands is a sixth-generation Demeter-certified biodynamic farm in New South Wales, run by farmer and ecologist Vince Heffernan. The property is home to a carefully bred flock of Texel sheep, an ancient heritage breed prized for its fine texture and exceptional flavour. The farm operates on organic, biodynamic, and regenerative principles. Sheep are 100% pasture-raised and chemical-free, grazing on a diverse mix of native grasses, trees, and shrubs. No artificial fertilisers, pesticides, drenches, or fungicides are ever used on the soil, plants, or animals.
Over the past 25 years, Moorlands has reintroduced tens of thousands of native species to the landscape, including 24 varieties of local wattles once found across the region prior to white settlement. While these plantings began as a rewilding effort to repair the land, they have become a surprising contributor to the sheep’s health and the flavour profile of the meat. At certain times of year, the sheep graze on wattle leaves and protein-rich seeds, offering nutritional benefits that enhance animal wellbeing and add subtle complexity to the finished product.
Vince personally oversees every step of the animal’s journey, including transport to the abattoir, ensuring the process remains calm and humane. His belief is simple: a low-stress life leads to better meat — for the animals, and for those who eat them.

Our goal is to build soil resilience—ensuring it can withstand the extremes of high rainfall, heat, and drought. Healthy soil needs structure, allowing for airflow, water infiltration, and retention, while naturally cycling nutrients and suppressing disease-causing pathogens. It should be teeming with micro-organisms, the foundation of a thriving ecosystem.
We are committed to sequestering carbon, drawing it from the atmosphere and storing it in stable forms within our soil—benefiting both soil health and the planet’s climate. Our sheep graze on a richly diverse diet, including pasture grasses alongside the leaves and seeds of native trees and shrubs, enhancing both animal health and meat quality.
We persist in rebuilding an ecosystem damaged by nearly 200 years of European settlement, using biodiversity as our measure of success.
