Hello lovely Quirky community,
It’s Shirley here. I’m a long-time gut health convert, and I’m lucky enough to work with Jo to bring you her favourite heritage chickens – fully outdoor-raised in grassy woodlands of NSW (read more about them here). These are natural old fashioned heritage chickens, bleach and chemical free (read more about that here) which is what makes them super nutritious, histamine and gut health happy.
First up – a huge thank you for all the questions that have come my way. I thought I’d share a few answers here so you can better understand how things work behind the scenes. I’ll add to this document every time something pops up that I think willhelp you – and others – know more.
Demand
When Jo shares a recipe using a specific cut (like marylands), demand for that cut goes through the roof. But each chicken only has two front ends (breasts and wings) and two back quarters (marylands and thighs) – so if I suddenly have 100 requests for Marylands, I need a lot of chickens to meet that! Every fortnight only 300–400 birds are processed to supply the whole country, so waiting lists are sometimes unavoidable. The good news? That small-scale, chemical-free, outdoor farming is exactly what makes these chickens so special and sought after.
A few ways to save money and make ordering easier:

Order whole chooks and portion them yourself (like Jo does).

Or try quartered chooks on the frame – you’ll get both marylands and breasts/wings in one go, plus the bones for stock. This is cheaper than ordering portions separately; and you get the added bonus of having all of the bones.

If portions are what you love, that’s fine too – just please be patient while I work through the waiting list. Consider looking at a sample box, while you’re waiting, or order a customised box and get a little bit of everything. The more customisation you make the higher the cost becomes, so if money saving is your option, look for whole cartons of single portions, such as full cartons of breasts, or those quartered chooks on the frame I mentioned above. The single most economical option is whole chickens.

When ordering on my website, pop a note in the ‘notes section‘ at checkout saying “Quirky Jo customer”. I offer Jo’s community a 5% discount across most cuts, and sometimes more on a first order depending on what you choose. It’s my way of saying thanks for supporting our ethical, chemical-free farming community.
It’s wholesale
Please remember you are buying wholesale quantities at wholesale prices. If you select “2” from the drop-down list when selecting cartons of chicken, that means you’re going to receive two cartons of chicken, not 2 chickens! Take some time to read, order carefully and remember this is not a retail store. This is a wholesale way of purchasing and supporting our farmers.
Want to make it even more cost-effective?
Think about a group order. If you team up with friends in your area, I can pack multiple cartons and send them to one central address for you to share out. Bigger group orders often unlock little extra discounts too.
